Amy's Chili Cook-off Award Winning Mixed-Bean Chili Recipe

I know this is off topic, but I had to share that tonight I won the Most Marvelous Award at our church's Chili Cook-Off. So, here's my recipe!!!

Amy’s Chili Cook-Off Award Winning Mixed-Bean Chili

1 lb ground beef, browned
1 medium onion, diced
1 small bell pepper, diced
1 ½ T chili powder
1 tsp cumin
2 cloves garlic

Brown beef, Sauté onion and bell pepper until tender, and then add garlic and seasonings and mix.

Add:
2 15-oz cans petite diced tomatoes
1 15-oz can pinto beans
1 15-oz can kidney beans
1 15-oz can white beans
1 15-oz can black beans
1 4-oz can diced green chilies or 3 whole oven-roasted green chilies, diced
1 C frozen sweet corn
1 8-oz can tomato sauce
1 10.75-oz can tomato soup

Bring to a simmer.

Season to taste:
1 tsp sea salt
½ tsp pepper
2 tsp sugar
1 tsp onion powder
¼ - ½ tsp garlic powder
¼ tsp dry mustard powder
½ tsp paprika

Serve with shredded cheddar cheese and sour cream.
Serve on the side: corn bread or tortilla chips


(I usually double this recipe, and if I have it, I will use 1 lb of ground elk.)
